Question of the day 3/11/12

I don't understand 1 thing, how can you not think of what is for supper for today, let alone yesterday to get it out of the freezer to thaw overnight? I took chicken out yesterday to thaw out and marinaded it overnight for today. What is everyone eating, bottled water????? In my eyes, If you don't think about food a day ahead of eating, you're not eating.

Our "main" meal of the day varies. We rarely eat a big dinner anymore. I make something substantial for our lunch/dinner in the afternoon. Today (Sunday) we always have a big breakfast, so we just had a nice salad (on the back deck) with lettuce, cheese, tomatoes, onions (I had some cut up turkey in mine, as well).

I rather eat fresh and not so into "defrosting". I make pasta things, salmon cakes, stir frys, salads, etc. When I do want some chicken breasts for lunch/dinner, I will take them out in the morning. No beef for me...trying to cut out chicken/turkey but I am still eating them.

I am eating very well, thank you, and can run some people around in circles with my energy, lol!!

I don't really cook much since it's just me. Nothing in my freezer except frozen berries for smoothies and some ice cream bars from Trader Joe's. (vanilla/raspberry 50/50 bars Yum!)

I'll probably heat up some soup, or have some pasta or maybe a quesadilla for dinner.

Just had some Kashi cereal for lunch.

^ Amber I love chili!!! Used to make that a lot in my cooking days.

We don't usually do a lot of meal planning either. I buy groceries once a week and then pick and choose from the fridge on that day. Since I'm vegan and Brent is not, we usually each cook our own main dish and sometimes share side dishes when it works out.

Today I think I'm going to have tacos made with Lightlife TexMex vegetarian mix. I could also have leftover Turkish lentil soup I made yesterday.
