Amanda's Turkey Chili
1 LB of ground turkey
1 can of chili-ready tomatoes
1 can of red kidney beans
1 can of pinto beans
1 cup water
2 tbsp chili powder
small onion, chopped
sprinkle of salt/pepper
1 clove garlic (or one tbsp chopped garlic)
1. Brown turkey and drain
2. add all ingredients in large pot
3. Heat over medium-high till bubbling, stirring occasionally
4. serve with shredded cheese and/or crackers
makes 4 servings

? lbs of trimmed tri-tip or top sirloin (? = depends on how much you want to make)
Fresh crushed garlic (again, amount depends on your taste)
Kikkoman Teriyaki Sauce
A dash of red wine
Thinly slice your meat. Take slices and marinate overnight in garlic, teriyaki sauce and wine.
Next day, steam up some white rice and prepare some fresh veggies. In a wok or pan, add a little oil, quickly stir meat around, then serve over the rice.

Chana Masala (Serve with Basmati Rice)
1 T olive oil
1 t cumin seed
2 small onions, finely chopped
2 cloves garlic, minced
1.5 c crushed canned tomatoes
2 cans chickpeas, , drained and rinsed
1/2 jalepeno
1 t garam masala
1 t salt
1/4 c chopped cilantro
1. Heat oil in a large skillet over high heat.
2. Add cumin seeds and cook until they begin to pop, about 30 seconds.
3. Add onions and cook until they begin to brown. Add garlic and cook 1 minute more, but avoid burning.
4. Add tomatoes, chickpeas, jalapenos, garam masala and salt. Reduce heat to low and simmer 10 minutes.
5. Stir in cilantro and serve.

How'd the pizza dough turn out, Amanda? I'm going to try making some in my food processor some time.
Garam masala is also curry powder.
Here's a pizza recipe from Vegetarian Times. It does have a lot of unusual ingredients, but many can be found on the asian aisle. It's definitely worth the extra effort of finding the ingredients because this pizza is so delicious. And, it's pretty healthy, too!!
Thai Chik'n Pizza
1/4 c natural salt-free peanut butter
1 T tamari sauce
1 T Asian chili paste
1 T sugar
2 1/4 t tamarind concentrate
1 clove garlic, minced
1/2 t curry powder
1/4 t toasted sesame oil
1/4 t grated fresh ginger
1 1-lb pkg. refrigerated pizza dough
4 white button mushrooms, thinly sliced
3/4 cup diced vegan "chicken" (Quorn and Morningstar are two good brands)
1/2 c diced red bell pepper
1 small shallot, quartered and thinly sliced
1/3 c chopped cilantro leaves
Sriracha hot sauce, optional
1. Preheat oven to 375 F. Coat baking sheet with nonstick cooking spray. Whisk together peanut butter, tamari, chili paste, sugar, tamarind concentrate, garlic, curry powder, oil and ginger in a small bowl.
2. Roll dough out to 12 x 17-inch rectangle on lightly floured work surface. Transfer to prepared baking sheet. Spread peanut butter mixture over dough. Sprinkle with mushrooms, "chicken", bell pepper and shallot.
3. Bake 25 minutes or until crust is golden brown. Cool 5 minutes then sprinkle with cilantro leaves. Drizzle with hot sauce, if desired.
Serves 8, 257 Cal, 11 G Protein, 11 G Fat (2 G Sat Fat), 29 G Carb, 0 Mg Chol, 497 Mg Sodium, 2 G Fiber, 5 G Sugars

I just made these Saturday.
Pumpkin bars
2 c. sugar
4 eggs
1c. oil
2c. pumpkin ( 1 can)
2c. flour
2t. cinnamon
1t. baking powder shift with
1/2t. salt shift with
2t. salt shift with ^
mix all , bake in sprayed cookie sheet at 350
for 20 to 30 minutes
Icing
2 1/2c. powderd sugar
3/4 butter ( i use blue bonnet)
3 oz cream cheese
2t. milk
1t. vanilla
put on cool bars

I got this from Southern Living...they are tasty little treats. It says it makes only one dozen, but I made them smaller. Also, my hubby doesn't like raisins so I left them out and there were just fine. :) Enjoy!

3/4 cup grated carrots (about 2 medium carrots)
2 tablespoons firmly packed dark brown sugar
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/3 cup raisins
1 (16.5-oz.) package refrigerated sugar cookie dough
Cream Cheese Icing
5 ounces cream cheese, softened
1/4 cup unsalted butter, softened
1 cup powdered sugar
1/2 teaspoon fresh lemon juice
1/4 teaspoon vanilla extract
1. Beat cream cheese and butter at medium speed with an electric mixer until creamy.
2. Add remaining ingredients, beating until smooth. Cover and chill 30 minutes or until spreading consistency. Makes about 1 cup

1. Toss together first 4 ingredients in a large bowl. Stir raisins into carrot mixture.
2. Tear cookie dough into pieces, and stir into carrot mixture until well combined.
3. Drop cookie dough mixture by tablespoonfuls, 2 inches apart, onto lightly greased baking sheets. (Dough should make 24 cookies.)
4. Bake at 350° for 15 to 18 minutes or until edges are crisp. Cool on baking sheets 5 minutes. Remove to wire racks, and cool 10 minutes or until completely cool.
5. Turn half of cookies over, bottom sides up. Spread each with 1 Tbsp. chilled Cream Cheese Icing. Top with remaining cookies, bottom sides down, and press gently to spread filling to edges of cookies.
Yield: Makes 1 dozen sandwiches

Here's a recipe for "Melt-in-your-Mouth Apple Slices" that I found yesterday in, of all
things, People magazine. I'm gonna try it!
1. Wash, peel & core 2 lbs. of Golden Delicious apples. Slice into quarters.
2. Place in large mixing bowl and cover with 3 T. sugar and 2 t.
"vanilla-infused sugar". (<----not sure what that is - anyone know?)
3. Over low heat, melt 2 T. butter in large saute pan, until slightly browned.
4. Toss apples in butter, taking care not to caramelize the sugar.
5. Add 8 1/2 T. apple liqueur and set alight. (how fun! lol) Once the flames have burned out, remove apples and cool on wire rack.
6. Then, place them on a cookie sheet and bake at 250 F for about 20 minutes. Serve warm.

This is a traditional Liverpool meal called Scouse, and where we get the name Scousers from

Ingredients
2 LB (900g) Lamb Fillet, cubed
2 LB (900g) Potatoes, diced 10 Shallots, peeled and chopped
12oz (345g) carrots, diced
2 small leeks, chopped
2 celery sticks, chopped
1 pint (570 ml) Chicken Stock
Half Level teaspoon dried Rosmary
Half Level teaspoon dried Sage
2 Tablespoons olive oil
Salt and Pepper
Method
1. Heat 1 tablespoon of oil in a large pan, add lamb and fry until brown.
2. Heat 1 tablespoon of oil in frying pan, add carrots, celery and leeks, fry on low heat until light brown, add to saucepan and mix with lamb
. 3. Stir in chicken stock, add seasoning and herbs, bring gently to the boil, stirring continuously.
4. Reduce heat and simmer for approx. 60 minutes until lamb is tender. 5. Add the potatoes and cook for a further 40 minutes until all vegetables are cooked, stir intermittently.
6. Serve immediately.

Lizzie, Pizza turned out really well. I got a little frustrated with it but thank goodness my husband is the calm one in the house. LOL! I'll post the recipe for the dough in just a bit.

Pizza Dough
3 cups all purpose flour
1 cup water
1 tsp salt
1 tbsp white sugar
2 tbsp olive oil
1 package dry yeast
1. mix all ingredients in large bowl.
2. let rise for at least 1/2 hour
3. preheat oven to 350
4. roll out onto square pan/pizza pan
5. top as desired
6. heat in oven 1/2 hour or until cheese is melted and crust is golden.

Mmmmm.....I'm gonna get some apples tomorrow and make those Apple Slices...perfect for Fall, I can smell them cooking...yummm. (I don't know what vanilla-infused sugar is either, but I'd probably just add some vanilla extract as a sub for it)
Here's a yummy dessert that I was recently turned on to...don't know it's name but its quick and easy. I like it when I want something sweet but light.
Note: There are no set measurements (sorry), you may have to play around with the quantities, particularly how much butter, brown sugar and walnuts to use, but you can judge after making one, how much you'll need for multiple servings:
Pour enough strawberry syrup (or syrup of your choice) in the bottom of a single-size serving dish, enough to cover
Add a layer of sliced, drained, canned peaches
Add a layer of cottage cheese (your choice of mf content)
In a saucepan or microwave: put approx. a TBSP. of butter and melt, add approx. 2 tsp. of brown sugar; then add approx. 1/2 cup walnuts and cook for a couple of minutes, then add a couple of squares of semi sweet choc. squares and melt them, (hint: you will have to judge whether to add more butter when melting the chocolate), mix together
Once the chocolate mixture is melted, pour over the peaches/cottage cheese mixture and enjoy.
(Hint: taste-test the chocolate/sugar/walnut mixture while still in the saucepan and make any adjustments then).

Good old Tuna Noodle Casserole.
2 cans (10-3/4 oz.each) Cream of Mushroom Soup
1 cup milk
2 cups frozen peas (optional)
2 cans (about 12 oz. each) tuna, drained
4 cups hot, cooked medium egg noodles
2 tbsp dry bread crumbs
1 tbsp butter, melted
Stir soup, milk, peas, tuna and noodles in a 3-quart casserole dish.
Bake at 400F for 30 minutes or until hot. Stir.
Mix bread crumbs with butter and sprinkle over tuna mixture. Bake for another 5 minutes.
For Cheesy Tuna Melt - in place of the bread crumbs, sprinkle 1/2 cup or so shredded Cheddar over hot casserole.
Chicken Noodle Casserole - substitute about 2 cups of cooked cubed chicken.
I for one leave out the peas, my husband won't eat them, lol. Not too crazy about the bread crumbs either.

This is a big family favorite, and it's very simple too. Instead of serving with rice (as pictured), I use orzo pasta tossed with a little bit of butter, dried basil, and dried oregano.
Skillet Chicken Breast Aglio e Olio

Makes 6 servings (serving size: 1 chicken breast half and about 2½ tablespoons sauce)
Six 6-ounce skinless, boneless chicken breast halves
½ teaspoon salt
1/3 cup all-purpose flour (about 1½ ounces)
1 tablespoon olive oil
2 tablespoons butter
8 garlic cloves, thinly sliced
2 to 3 tablespoons capers, drained
4 pickled hot cherry peppers, halved and seeded (if you can't find, use about 1/2 cup of jarred roasted red bell pepper relish)
2 cups vegetable broth, preferably organic
1 tablespoon dry bread crumbs
3 tablespoons chopped fresh flat-leaf parsleySprinkle chicken with ¼ teaspoon salt. Dredge chicken in flour.
Heat oil and butter in a large nonstick skillet over medium heat. Add chicken; cook 4 minutes on each side or until browned. Add garlic; cook 30 seconds. Add capers and peppers; cook 30 seconds. Add broth; bring to a boil. Reduce heat, and simmer 5 minutes or until chicken is done. Stir in bread crumbs; cook until liquid thickens (about 1 minute). Taste sauce, and add remaining ¼ teaspoon salt, if needed. Remove from heat; sprinkle with parsley.
Nutrition information per serving: 286 cal., 8.5 g total fat (3.3 g saturated), 40.9 g pro., 9.1 g carbo., 0.6 g fiber, 109 mg chol., 831 mg sodium.

^ Oh, BELIEVE me Ref, they do their share of pissing and moaning! But I've found a few things along the way that they actually like. For this recipe, I serve the sauce on the side, so they can dip the chicken. Depending on the phase of the moon, the day of the week, or the current TV show on Nick :icon_rolleyes: , they may (or may not) eat the sauce.

Hot Sh*t Guacamole Salsa
4 vine-ripe tomatoes
1 1/2 avocados
1 1/2 fresh squeezed lime juice - add pulp if you'd like
3 jalapeños - leave the veins in
1/3 onion
tbsp garlic
generous sprinkling of dried cilantro or fresh chopped
generous sprinkling of cumin
couple sprinkles salt
blend together in blender or food processor

Oh, that Guacamole Salsa looks good. It looks like a good, lower-calorie alternative to straight guacamole. I'm going to try that one.

1/4 cup sugar

Ref's Easy Bake Ziti, lol.
2 Jars of Prego (1lb 10oz each) whichever sauce you choose.
4 Cups of shredded mozzarella chesse
1 lb of ziti pasta or penne pasta
Cook spaghetti sauce per directions and preference. Cook your noodles and strain.
Pour both in a 13x9 inch pan. For easier cleanup, spray with Pam.
Sprinkle the cheese over noodles and sauce.
Baked uncovered at 325F till cheese is melted to your preference.
Then serve with a salad.

I'll have to try some of these delicious recipes you're all sharing. I love trying new things. Here's a recipe I tried last week... it got rave reviews.
4 to 6 sirloin chops, boneless or bone-in
seasoned salt and pepper
olive oil, about 1 tablespoon
1/2 cup chopped onion
4 ounces coarsely chopped mushrooms
1/2 cup chicken broth
3 tablespoons Creamy Ranch Dressing
1 1/2 tablespoons bold and spicy mustard Heat olive oil in skillet over medium-high heat. Salt and pepper the chops; put in skillet, in batches if necessary, and brown quickly on both sides. Remove to a baking dish lightly sprayed with nonstick cooking spray. To the hot skillet, add chopped onions and mushrooms. Cook, stirring, until onions are browned and just tender. Add chicken broth to the pan.
Stir together Ranch dressing and mustard; add to broth. Let the mixture boil for a minute; pour over chops in baking dish. Cover baking dish with foil and bake at 325° for 1 1/2 hours.
The pork chops were literally falling apart.. they were so tender and juicy. Delicious!

Gooey Pumpkin Butter Cake

Filling

1 (15 ounce) can pumpkin
3 eggs

1 teaspoon cinnamon
1 teaspoon nutmeg

Preheat oven to 350.F

add 3 eggs, vanilla,and 8 teaspoons butter, and beat together.
Next, add the powdered sugar,cinnamon, nutmeg, and mixwell.
Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes.
Make sure not to overbake as the center should be a little gooey.
Serve with whipped topping.

Costolette D'Agnello alla Parmigiana - Lamb Chops, Parma Style.
Ingredients
6 double rib lamb chops. Prepare each double chop by removing one of the rib bones and leaving the other attached, then butterfly the meat and pound it thin like scaloppine.
About 1/2 cup unbleached all-purpose flour, not enriched 2 extra-large eggs Salt and freshly ground black pepper to taste About 1/4 cup unseasoned bread crumbs, lightly toasted, preferably homemade
To Fry
8 tablespoons (4 ounces) unsalted butter
To Bake
3 tablespoons freshly grated Parmigiano-Reggiano
1/2 cup completely defatted meat broth, preferably homemade
Lightly flour the meat, and then lightly beat the eggs with a pinch of salt and pepper. Dip each costoletta in the eggs, and then bread it on both sides, pressing the bread crumbs very well. Repeat with the other five costolette. Heat four tablespoons of the butter in a skillet over medium heat, and when the butter is completely melted and rather warm, add enough of the lamb chops not to crowd the skillet. Fry for about thirty seconds on each side; the meat should be lightly golden.
Transfer the cooked meat to a glass baking dish. Finish cooking the remaining lamb chops adding more butter as needed.
Preheat the oven to 375 degrees.
When ready to serve, sprinkle half a tablespoon of the grated Parmigiano over each lamb chop and pour the broth into the baking dish, but not over the meat. Bake the lamb chops for about five minutes or until the cheese is incorporated into the meat. Serve immediately and enjoy!
Variants
Lamb chops are fried in the butter without any coating.
Some thinly sliced fresh white truffles are placed over each chop when they are arranged in the baking dish, before sprinkling over the cheese: this variant is called Costolette D'Agnello alla Parmigiana con Tartufi (Lamb Chops, Parma Style, with Truffles).

buy a white cake mix and it will come out white with egg whites, if you want it yellow, add the egg yokes and you have yellow!!!!! very simple, don't buy both, just get the white cake mix and add or leave out the yokes. now you bought 1 mix and can make it anyway you want.

Homemade yellow cake mix recipe
YELLOW CAKE MIX (HOMEMADE)
2 c. flour
1 tbsp. baking powder
1 tsp. salt
1/2 c. butter, softened
1 1/4 c. sugar
2 eggs
3/4 c. fluid milk
1 tsp. vanilla
Beat together butter and sugar until light and fluffy.
Sift together the flour, baking powder and salt. Set aside.
To mix the cake add the flour mixture slowly to butter mixture in a large bowl, beating well (300 times).
Add half of the flour mixture, then half of the milk and the vanilla. Mix (50 times). Add the eggs, beating well after each addition.
Add the remaining flour mixture, then the rest of the milk. Mix until smooth (200 times). Fill a greased, floured baking pan or 2 layer pans no than half full. Bake at 375 degrees (moderate oven) 25 to 35 minutes until cake springs back when lightly touched near center.

Weight Watchers Cake - 1 point a slice
1 box regular cake mix (higher fiber)
1 can pumpkin
1 cup water
mix and bake at 350* for 45-50 min
Top with Lite Whipped Cream
Got one in the oven now..very moist, needs to be refrigerated.

Pasta Alla Vodka Recipe

1 jar marinara sauce
1 cup vodka
1/2 cup grated parmesan
1/2 cup heavy cream
1/2 lb. smokey slab bacon (I used black forest bacon)
1 lb. penne pasta

This is amazinly simple. Place bacon on a cookie sheet and bake for 8-10 minutes in a preheated 400 oven. Bacon should be cooked through and slightly crisped. Remove and let cool, then slice into 1/2" pieces.
Add marinara to a cooking pot. Use a stick blender to puree the sauce. Place over medium heat, add chopped bacon and vodka. Simmer for 20 minutes. Meanwhile, cook pasta according to package directions and then drain.
When sauce has simmered for 20 minutes, add paremesan and cream. Simmer for 3 additional minutes. Pour sauce over pasta and toss.

I have a problem with flourbugs. I googled this, it said use bayleaves to rid the bugs. Has anyone used these? My flour is in tupperware, it's my other dry goods that are being

^ Flower, I have never had this problem, but I read somewhere that if you freeze flour for 24 hours when you buy it, it will get rid of bugs.

I made this simple goody last week - it's a great cold dessert for summer time!
4 cups fresh strawberries, divided
1 can (14 oz) sweetened condensed milk
1/4 cup lemon juice
1 tub (8 oz) whipped dairy topping (like Cool Whip)
8-10 Oreo cookies (generic works too) - crumble 'em up
1 Tbsp butter, melted
Line a 9 x 5 loaf pan with foil so the ends extend over the the sides of the pan. Mash 2 cups of strawberries in a large bowl - add condensed milk, lemon juice and about 2 cups of the whipped topping. Mix it all up and pour into foil lined pan.
Mix crumbled cookies and butter. Spoon over the top of the "strawberry" mixture and spread evenly (this will become the crust). Cover with plastic wrap and freeze. My first one was ready in about 5 hours.
Turn out the frozen form (cookie crust side down) onto a plate and peel off foil. "Frost" your frozen goody with the left over whipped topping and garnish with remaining strawberries (I sliced 'em up and laid out on top).
Slice and serve.

Island Salad
for 4+ people
For The Dressing
3 tablespoon honey
3 tablespoon lime juice
2 tablespoon canola oil
Zest of one or two limes
Combine ingredients and set aside.
For The Salad
1 cup sugar snap peas, trimmed
1/2 head romaine lettuce
1 avocado, sliced
1 mango, cubed
1/2 red onion, thinly sliced
1/4 cup coconut, shredded and lightly toasted (or more)
To toast coconut - place in 250/300 degree oven for about 5 minutes until coconut is darkened. Watch closely.
Place peas, lettuce, avocado, and red onion in salad bowl and toss to combine. Toss with enough dressing to lightly coat then sprinkle with coconut. Serve immediately.

Spicy Chicken Seasoning Ingredients:
1 tablespoon seasoning salt
1 tablespoon crushed red pepper flakes
2 teaspoons black pepper
2 teaspoons cayenne pepper
2 teaspoons poultry seasoning
1 teaspoon lemon-pepper
12 whole chicken wings, cut in 1/2 at the joint
Spicy Chicken Batter:
2 eggs
2 tablespoons hot sauce
1 tablespoon crushed red pepper flakes
1 teaspoon black pepper
1 teaspoon cayenne pepper
2 cups all-purpose flour
Vegetable oil, to fry
Dipping Sauce, recipe follows
In a small bowl whisk together seasoning salt, red pepper flakes, black pepper, cayenne pepper, poultry seasoning, and lemon pepper. Reserve 2 tablespoons in a separate bowl.
Rinse chicken wings in cold water and place into a shallow baking dish. Sprinkle the wings evenly with the seasoning, and let them marinate, covered and chilled, for 1 hour.
Whisk eggs, hot sauce, red pepper flakes, black pepper, and cayenne pepper into a medium size mixing bowl. Reserve. Put the flour into a shallow dish or pie plate.
In a large deep-fryer or large Dutch oven heat oil to 350 degrees F on a deep-fat thermometer.
Dredge chicken wings into the egg mixture then into the flour. Place wings 3 at a time into the hot oil and cook for 8 to 10 minutes, turning occasionally, until cooked through and golden brown. Remove to a paper towel lined sheet tray. Make sure oil returns to temperature before adding the next batch. Sprinkle the wings with the reserved seasoning for extra hot wings.
Serve with dipping sauce.
Spicy Dipping Sauce:
1 cup sour cream
2 tablespoons horseradish
1/4 tablespoon chili sauce
1/2 teaspoon cayenne pepper
Salt and freshly ground black pepper
Mix all the ingredients together in a small bowl.

^really? i thought everyone eats wings for bar snacks. next time i'm in town, i'll take you out for wings. it'll be a little different than steaks and martini's, but it's fun. btw, i saved the flyer from that place i ordered the wings from for future visits and i have the phone # to that place that delivers beer and wine too.....lol.

ok, i was out of wings, but made the seasoning mix. i took out a 9 pack of chicken (3 legs-3 breasts-3 thighs) and coated with the mixture and put in the oven to bake on a rack at 350 degrees. when they were done, i dipped each piece of chicken in hot buffalo sauce and put on the grill til they were nice and crispy. and you know what, it was great and i ate all 9 pieces!!!!!!!!!.
