We always have so much leftover we eat it till it's gone. Believe me, it doesn't last long. It ended last night when we took the ham bone with some meat still on it and made navy bean soup with it. Mmmm, it was delicious!

^ Marleen, I'll bet Toni can. She's the gourmet around here. The lady that
does my hair did give me a recipe she saw on Food Network for a pumpkin
butter cake that sounds too good to be true. She said she made it for
Thanksgiving this year and everyone loved it. After work, I'll post it in the
recipe thread. Yum!

Made a pot of beans with the ham bone. Still have a bit of ham left. I'm sure Barf Boy will have a sandwich today.

I've been making other stuff out of the leftovers: potato and turkey soup, a casserole thing, and (my favorite) turkey quesadillas.

Actually, I don't do much baking. I did find a really easy recipe for you, Marleen.

Each year our family Thanksgiving gets smaller and smaller. We had a turkey breast and still there were lots of leftovers.

Thanks Magnolia, no big deal.. i will try it as soon as I figured out how many grams all these ounces make and how much fresh pumpkin that makes (no canned p. here) maybe same in fresh pureed ? and there's still - sorry- a problem : what's a "package of yellow cake mix" ??? OMG

Homemade yellow cake mix recipe
YELLOW CAKE MIX (HOMEMADE)
2 c. flour
1 tbsp. baking powder
1 tsp. salt
1/2 c. butter, softened
1 1/4 c. sugar
2 eggs
3/4 c. fluid milk
1 tsp. vanilla
Beat together butter and sugar until light and fluffy.
Sift together the flour, baking powder and salt. Set aside.
To mix the cake add the flour mixture slowly to butter mixture in a large bowl, beating well (300 times).
Add half of the flour mixture, then half of the milk and the vanilla. Mix (50 times). Add the eggs, beating well after each addition.
Add the remaining flour mixture, then the rest of the milk. Mix until smooth (200 times). Fill a greased, floured baking pan or 2 layer pans no than half full. Bake at 375 degrees (moderate oven) 25 to 35 minutes until cake springs back when lightly touched near center.
